Mexican Pizza

Friday's are our family's Pizza night.  Last week I was in the mood to try something unique.   My food doesn't always look this pretty, so when it does, I enjoy snapping a quick picture...or 3.


Mexican Pizza

Favorite pizza crust recipe (we used a gluten-free packaged mix)
1 can black beans (rinsed and drained)
1/2 tsp. cumin
1/2 tsp. chili powder
1/2 tsp. salt
2 Tbs. water
4-5 Roma tomatoes
1/2 red onion (sliced)
Whole corn (half a can or about 1/2 cup from the freezer)
Cilantro (chopped)
Shredded cheese (your favorite, we prefer marble)

Place rinsed and drained black beans in a blender along with your spices.  Blend well.  Spread bean mixture on top of prepared pizza crust.  Slice Roma tomatoes and red onion and place on top of bean mixture.  Sprinkle corn, chopped cilantro and shredded cheese on top.  Drizzle lime juice to top it off if you so desire.  Bake according to your crust instructions.  Hope you enjoy as much as we did!!!
