We have a dear friend of our family whom we call Grandma Patty. Although she isn't a blood relative, she is so precious to us and our children that they look to her as a grandma. She gives excellent hugs, is an intent listener, and a wonderful cook.
She brought us a meal the day we moved into our home and it was Taco Salad. So perfect and fed a ton of people. Well, at least 10. This is her recipe....
1 lg head of lettuce, chopped
8 oz grated cheese
1 sm. can kidney beans
1 lg. onion, chopped
4 med. tomatoes
1 pkg. Doritos
1 pkg. taco seasoning
1 (8oz) bottle 1000 Island dressing
1/3 c. sugar
1 T. taco seasoning
1 T. taco sauce
Brown and drain hamburger. Add seasoning saving 1 T. for dressing. Cover and put in refrigerator until ready to serve. Combine all other ingredients, add dressing and top with cheese. This is a meal in itself.
I serve the onions on the side and I have used salsa before instead of the taco sauce. We usually serve this with some kind of fruit. It makes a wonderful summer meal.
