Oven Roasted Veggies



Oven Roasted Veggies

1 squash
1 Zucchini
2 potatoes
1 onion 
2 small sweet potatoes
any other veggies that you have on hand and want to add.
1-2 T. olive oil
1/2 t. garlic salt
1/2 t. oregano
1/2 t. basil
salt and pepper to taste
red pepper flakes if you so desire
Parmesan Cheese sprinkled on top if you desire

Slice up veggies and put in large zip-lock bag.  Toss in oil and spices.  Seal and shake.  Try to coat veggies evenly.  Then place veggies in a greased 9x13 pan and bake in oven for 30-40 min. at 475.

Now that it is grilling season, instead of the oven toss them into your grilling basket and stir often.  Cook until crisp tender.

I've never roasted squash before, just bought some since mine in the garden haven't produced yet. Will have to try it when it cools off. In the meantime, we will cook them on the grill.
